Seabuckthorn and Raspberry Smoothie – A Bit of Sunshine in Your Day

Berries might be one of the food groups that I love the most. I use them daily in smoothies, put them on my porridge, pancakes, or eat just plain or with coconut yoghurt. Berries provide us loads of antioxidants and brighten our day with vivid colors. At our summer cottage in Finland we have dozens of blackcurrant bushes that provide lots of berries that we freeze for use during the winter.

Seabuckthorn and Raspberry Smoothie - A Bit of Sunshine in Your Day

Yesterday I put up a smoothie with seabuckthorn juice (unpasteurized Latvian seabuckthorns) and raspberries, and it turned out quite nicely.

Ingredients included:

1,5 dl coconut water
1 dl seabuckthorn juice
1,5 dl of raspberries
1 tbsb coconut yoghurt
1 scoop of vanilla flavored Sun Warrior protein
2 tsp carob powder

Today I made some changes:

Instead of using coconut water and -yoghurt, I substituted them with coconut milk, and the smoothie was even more delicious. This coconut milk is made from young green coconuts so if you have access to them you can make it for yourself.

The other ingredients remained the same. Just use 1,5 dl of coconut milk instead of juice and leave the yoghurt out.
